The freshly collected coconut nectar is sweet and nearly neutral in pH (equal 6), contains 14-19% sugar and is rich in important nutrients. TIANA organic crystallised coconut nectar is crystallised from raw coconut nectar within 4 hours of collection at low temperatures (below 50° C). It has a light golden colour because the sugars in the nectar did not caramelise from heat. (Coconut sugar is not raw as it is crystallised at temperatures above 100° C).
