VEGETABLES IN TIANA COCONUT MILK


 
 
Vegetables in TIANA Coconut Milk

Ingredients:

125 ml TIANA Premium Coconut Milk
2 tablespoons olive oil
2 cloves garlic, chopped
5 cm piece of ginger, grated
1 aubergine, diced
1 sweet potato, diced
2 teaspoons water
100 g green beans cut into 5 cm pieces
1/2 bunch asparagus cut into 5 cm pieces
2 teaspoons fish sauce
12 English spinach leaves, trimmed
1/2 cup basil leaves

 
 


Method:  

  1. Heat the oil in a frying pan. Cook the garlic and ginger for 30 seconds. Add aubergine , sweet potato and water and cook for 5 minutes over medium heat.

  2. Add the beans cover and steam for 4 minutes.

  3. Add asparagus and coconut milk and cook for 3 minutes. Add fish sauce, spinach and basil; toss until spinach and basil soften slightly and serve.
