THAI FISH AND TIANA COCONUT MILK STIR-FRY


 
 
Thai Fish and TIANA Coconut Milk Stir-Fry

Ingredients:

150 ml TIANA Premium Coconut Milk
450 g fish (cod, etc) trimmed and cut into pieces
Grated zest and juice of 1 large lime
1 tbsp olive oil
1 green chili, deseeded and chopped
4 tbsp Thai fish sauce
4 tbsp fresh coriander leaves
4 spring onions cut into 2, 5 cm shreds

 
 

Method:  

  1. Place the fish in a bowl with the lime and zest. Stir well and leave to marinade for 20 minutes.

  2. Heat the oil and stir-fry fish for 3-4 minutes.

  3. Add the chili and stir fry for 1 more minute and add the coconut milk, fish sauce, half the coriander and spring onions. Cook for 1-2 minutes and serve with Thai fragrant rice and the remaining coriander sprinkled over.
