TIANA COCONUT PANCAKES


 
 
Delicious pancakes using TIANA coconut milk.

Ingredients:

275 ml TIANA coconut milk
¾ cup plain flour
4 tbsp rice flour
3 tbsp caster sugar
50 g desiccated coconut
1 egg
Vegetable oil for frying
Lime wedges and maple syrup to serve

 
 

Method:  

  1. Place the plain flour, rice flour, sugar and coconut in a bowl, stir to mix and make a small well in the centre. Break the egg into the well and pour in coconut milk.

  2. With a whisk beat the egg into coconut milk and gradually incorporate dry ingredients, whisking constantly until the mixture forms a batter.

  3. Heat the oil and pour in 3 tbsp of the mixture. Cook pancakes over a high heat and serve with the lime wedges and maple syrup.
