CHICKEN WITH MANGO SAUCE AND TIANA COCONUT MILK

Ingredients:
250ml TIANA Premium Coconut Milk
1 tablespoon peanut oil
5 chicken thigh fillets, sliced
300g broccoli, chopped
150g snow peas
1 tablespoon mild curry paste
1 tablespoon lime juice
½ chicken stock cube
½ cup water
1 tablespoon mango chutney
1 medium mango, sliced
? cup flaked coconut, toasted
¼ cup chopped fresh coriander leaves |

Method:
- Heat oil in large pan and stir-fry chicken
- Add broccoli, snow peas, paste, juice, stock cube, water, coconut milk and chutney and
stir until mixture boils.
- Stir in mango; serve sprinkled with coconut and coriander.
