All coconut oils are different
Coconut oils are not all the same in quality, appearance, flavour, aroma, taste and nutrition.
The most commonly coconut oil is refined, bleached and deodorised coconut oil or RBD coconut oil, which is produced from dry coconut meat (copra). RBD coconut oil is produced from copra. Copra is made by drying coconut in the sun, smoking and heating it. During the production process, chemicals are used and the oils are heated to high temperatures.

Various Virgin Coconut Oil Production Methods
Virgin coconut oil can be produced either from fresh coconuts or dried coconuts. Unlike olive oil, there are no sets of guidelines to classify coconut oil as "virgin".
Most of coconut oils marketed as "virgin" are produced by the following methods:
Coconut oil produced from pressing dry coconuts, which were dried up to 36 hours
Quick drying of fresh coconut meat which is then used to press out the oil. Such virgin coconut oil can be stated as "cold pressed virgin coconut oil"
Coconut oil produced by centrifuged extraction
Produced from coconut milk by fermentation. "Coconut milk" is expressed first by pressing. The oil is then further separated from the water. Methods which can be used to separate the oil from the water include boiling, fermentation, refrigeration and mechanical centrifuge. Centrifuged virgin coconut oil has usually a very high content of water up to 2%, which makes the product rancid within 6 months from the day of production.
Coconut Oil expeller pressed
Coconut oil is expeller pressed from coconuts after the adjustment of the water content, then pressing the coconut flesh again to extract the oil.
The quality of virgin coconut oil pressed from coconuts depends on the production temperature. This type of virgin coconut oil is pressed at higher temperatures, than ambient (normally around 60 degree C), it will reflect on their nutrition and it cannot be classified as cold pressed oil.
During the production of virgin coconut oil by centrifuged or expeller pressed methods higher temperatures are raised due to the speed of these mechanical methods.
